"Falling in Love" Chocolate Mousse Pie From Waitress

It's a testament to the incredible talent of Adrienne Shelly, my late partner on Waitress (available on DVD on November 27), that she not only wrote, directed and starred in the film, but she also dreamt up all of these amazing pies herself.  To paraphrase Andy Griffith's character in our movie, Adrienne's pie creations were "a thing of beauty…each flavor opens itself, one by one, like a chapter in a book."

Keri Russell plays Jenna, our resident "pie genius" at Joe's Pie Diner. Her life-inspired pie recipes (with fanciful titles like "Kick in the Pants Pie", "I Hate My Husband Pie" and "Pregnant Miserable Self-Pitying Loser Pie") helped tell the film's story, while conveying her inner emotions with a devastating sense of humor.

Among Adrienne's creations, one of my favorites is the "Falling-in-Love Chocolate Mousse Pie", which reflects Jenna's feelings as she starts daydreaming about the local country doctor (Nathan Fillion). It's the perfect dessert or aphrodisiac for the holiday season, especially if you are spending the evening at home with (shameless plug here) the DVD of Waitress. I hope you'll enjoy the film – and the pie recipe below (slightly modified from the original) – as much as we enjoyed making them. "Falling in Love" Chocolate Mousse Pie (Serves 8)

Ingredients:

Chocolate
  • 1 (14-ounce) can sweetened condensed milk (not evaporated milk)
  • 2/3 cup water
  • 1 (4-serving) box chocolate flavored pudding mix (not instant)
  • 1 (1-ounce) square unsweetened chocolate
  • 2 cups (1 pint) whipping cream, stiffly whipped
  • 1 (9-inch) baked pastry shell

Directions:

  1. In a large saucepan, combine condensed milk, water and pudding mix; combine well. Add chocolate. Over medium heat, cook and stir rapidly until chocolate melts and mixture thickens.
  2. Remove from heat, beat until smooth. Cool. Place in the refrigerator and chill thoroughly. Stir. Fold in whipped cream and pour into prepared pastry shell.
  3. Chill four hours until set.
