who plays composer Dave Seville in the big-screen holiday
hit, Alvin and the Chipmunks, and the title
redneck on TV’s “My Name is Earl”, certainly knows
his guy grub. As the dad of a four-year-old boy, the
veteran of Kevin Smith movies is spending more time
with his son and has been working on family fare like Alvin, Monster
House, Underdog and The Incredibles (in
which he provided the voice of the villainous comic
book fanatic, Syndrome).
At the press junket for Alvin and the Chipmunks, Jason told Fandango that his favorite holiday dish is simple (but not exactly nutritional): waffles with peanut butter and syrup. And it’s no small coincidence that in the movie itself, Lee strikes a deal with the voracious chipmunks that they can eat unlimited waffles in return for performing his songs.
This recipe, created by Diane Brown, author of The Seduction Cookbook, offers a do-it-yourself waffle mix that is bound to get your own little chipmunks bouncing off the walls for the holidays.
Waffles with Peanut Butter and Syrup (Makes 6 waffles)
Use a blender to prep your waffle batter and you'll have tender, crisp waffles in minutes.
Ingredients
- 2 eggs
- 1 cup milk
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 3 teaspoons baking powder
- 2 teaspoons sugar
- ½ teaspoon salt
- 6 tablespoons chunky peanut butter
- 6 tablespoons real maple syrup
Directions
- Mix the eggs, milk, butter and vanilla in a blender. Put the flour, baking powder, sugar and salt into the pitcher of the blender, and pulse until blended. Heat a waffle iron to manufacturers recommended heat, and put one cup of waffle mix in the iron. Close and bake until steaming stops and the waffles are crisp, tender and brown.
- Top each waffle with peanut butter
and syrup.
