The daughter of a French bakery owner and a long-time vegetarian, Alison told Fandango that she enjoys carrot soup for the winter holidays. This hearty recipe, perfect for chilly nights, is created by Diane Brown, author of The Seduction Cookbook.
Carrot and Star Anise Soup
Ingredients
- 2 tablespoons olive oil
- 4 cloves garlic, minced fine
- 4 shallots, minced fine
- 4 cups prepared chicken broth
- 12 whole carrots, peeled and cut into 4 portions
- 1 large russet potato, peeled and cut into large cubes
- 3 whole star anise cloves
- 2 tablespoons fresh thyme, plus one teaspoon reserved, chopped
- Salt and freshly ground black pepper
Directions
- In medium saucepot, heat olive oil to a sizzle. Cook garlic and shallot until softened, but not browned. Add chicken broth, carrots, potatoes, star anise, and thyme. Cook on medium flame, boiling gently, for 30 minutes, until carrots are fork tender.
- Remove star anise from mixture. In blender or food processor, add the above mixture in batches to work bowl and process until smooth. Strain and season to taste with salt and pepper. Serve immediately, garnished with chopped thyme, or store in refrigerator and reheat.
